Most of us go through eating phases…or maybe I’m saying that to make myself feel better! After a fun week of eating junk, I quickly jump onto the clean eating train. Salads are my go-to when trying to eat healthy, but sometimes a simple salad gets boring. Unfortunately, a boring salad will just lead to more junk eating. Clearly, I have no self control.
But! I found a fun way to enjoy a salad. A deconstructed salad! So my theory on why this is tastier is based on the separation of the ingredients. With deconstructed salads, you can combine whatever ingredients you want in whatever ratios. It’s kind of like charcuterie, but with vegetables. And this girl loves charcuterie!
