One constant in our weekly meal prep menu is healthy roasted vegetables. They’re simple to make, easy to flavor and hold up their texture well over time. The recipes for roasted vegetables are endless and they make a well balanced and versatile side to your meal prep protein. We’ve tried tons of cooking combinations for making these healthy vegetables and created this easy to reference infographic with some cook times and options for various popular veggies.

A few tips on how to get perfectly cooked healthy roasted vegetables:
- use a large rimmed baking sheet. You want your veggies spread out in one even layer so they can crisp up on both sides and cook evenly. If you overlap them, this won’t happen and you’ll end up with soggy vegetables!
- line your baking sheet with foil to help with clean up. The veggies may stick to the pan and it’s a pain to clean so foil really helps.
- use a decent amount of high-quality oil, we like olive oil. Without a nice layer of oil, the veggies won’t roast well, but don’t use too much either. Make sure all of the vegetables have a nice coating evenly distributed.
- stir the veggies every 10 minutes. Regardless of the cooking time for each specific vegetable, give them a stir often to avoid them sticking to the pan!
- cook them in batches. Start with the veggies that take the longest to cook first and keep adding new veggies in intervals based on the cooking times. Now all of your vegetables will be ready at the same time!
- let them get crispy and toasty. The best part of roasted vegetables is the delicious char the develop on the ends, with the soft and flavorful insides. Wait for the color to form on the outside before you take them out!
