Raise your hand if you need a burst of energy midway through the day. We are huge matcha advocates here and love whipping up an iced matcha latte for a quick pick me up. We also recently discovered how easy it is to make cashew milk, so why not combine the two. And there you have it, an iced matcha latte with homemade cashew milk. Perfectly packed with creamy, caffeine-filled matcha goodness.
So when we say that cashew milk is easy to make, it really is the simplest nut milk to make at home. You literally soak cashews in water for a few hours, drain, and then whip up the soaked cashews with some water. Blend blend blend and you have homemade cashew milk. Easy enough, right? The result is a low-calorie delight that is creamy, earthy and a great base for smoothies and lattes. Alright, now onto the full recipe.
Iced Matcha Latte with Homemade Cashew Milk
Start off by covering 1 cup of unsalted cashews in water and soaking for 2 hours (or overnight, the longer the better.) If you’re short on time, you can also simmer(not boil) cashews in water for 8-10 minutes. After the soaking/simmering period, rinse your cashews well.
Add cashews, 4-8 pitted Medjool dates (the more, the sweeter the drink,) 2-3 tsp Matcha Powder, 1 Tbsp Maple Syrup (optional,) 4 Cups of Water, 1 tsp vanilla extract and a pinch of salt. Blend in a high-speed blender, such as the Vitamix, at low for 30 seconds and work up to high for another minute.
Pro-tip: having a high-speed blender is crucial if you want a smooth and creamy texture. Since there is no straining, everything needs to blend until it is completely liquid-y.
Since you’re blending in a high-speed blender, the result should be creamy, foamy concoction that’s smooth and silky. Serve it on a bunch of ice and thank me later!
It’s also very easy to personalize this recipe with other options, say you don’t want sweetness-opt out of the maple syrup, or add stevia instead. Or instead of dates, try adding goji berries or dried plums to the mix. Or add dates and goji berries for more depth in flavor. All you really need is cashews, water, matcha powder, some dried fruit, and a pinch of salt!

- 4 Cups Water
- 4-8 Medjool Dates
- 1 TBSP Maple Syrup
