If you’re looking for filling recipes that are still low-carb and healthy, these butternut squash recipes are exactly what you need. All of the fall squashes are piling up at the grocery store, and we love cooking with them the entire season. A basic butternut squash concoction would just be the roasted option, but if you’re feeling creative, try one of the more interesting recipes like a vegan mac and “cheese” sauce.
The most important thing to know about butternut squash is, it’s hard to cut. So purchase it pre-cut or microwave it for a few minutes before prepping it. Our foolproof process is:
- Place the butternut squash on the side on a cutting board with a grip on the bottom.
- Use a very SHARP chef’s knife(this is key) to slice off the top 1/2-inch of the squash and step. Slice off the bottom 1/2-inch of the squash too. Throw away these pieces.
- If your recipe calls for a peeled squash, use a vegetable peeler get the skin off of the squash.
- Make several large slits in the squash. If you’re stuffing it, make the cuts like a dotted line to mimic a slice down the half of the squash.
- Microwave for 3-5 minutes to soften it a bit. Let cool.
- Carefully cut, core and slice the butternut squash however you need it.
