To make this cowboy caviar, you need a can of black beans, a can of sweet whole kernel corn, Roma tomatoes, Vidalia onion, red bell pepper, jalapeno, avocado, cilantro, garlic, chipotle powder, olive oil, sugar, white wine vinegar, lemon, sugar, salt, and pepper.
The most surprising thing is the white wine vinegar, but it’s the acid that really ties all of the ingredients together.
All you need to do is combine all of the ingredients together and you have amazingness in a plate. The cowboy caviar actually tastes better if you let it sit for an hour or so. The flavors all meld together and create a perfect dip. Can you tell that I’m obsessed with this?!
You can eat it on tacos, with tortilla chips, as a quesadilla filling, on a tostada, in enchiladas, by itself; the options are endless. It truly is an essential part of our Mexican meal times!

- 1 can of black beans
- 1 can of sweet whole kernel corn
- 3 Roma tomatoes, diced
- 1 Vidalia onion, diced
- 1 red bell pepper, diced
- 2 jalapeno, diced
- 2 avocado, diced
- 1 cup cilantro, diced
- 4 garlic cloves, minced
- 1 tsp chipotle powder
- 1/3 cup olive oil
- 1 tbsp sugar
- 2 tbsp white wine vinegar
- 2 tbsp lemon
- 1/2 tsp salt,
- 1 tsp pepper
- Combine black beans, sweet whole kernel corn, tomatoes, onion, bell pepper, jalapeno, avocado, cilantro, and garlic. Stir thoroughly.
- Mix together olive oil, chipotle powder, sugar, white wine vinegar, lemon, salt and pepper, Whisk until combined.
- Add dressing to black bean mixture and stir until combined. Refrigerate if time allows and enjoy cold!
