Spring is getting closer and closer, which means it’s time to enjoy all of the fun things that come with the season. Warm weather and fresh florals are two spring things I’m most excited for. Easter is just around the corner too! When I was grocery shopping at The Fresh Market, I got a wave of inspiration on what to make for Easter brunch. They have the cutest Easter candy display; I wanted everything!
Believe it or not, I managed to pull together a brunch that would be perfect for Easter in less than 2 hours. It included a brie and charcuterie board, a rack of lamb with mint pesto, roasted veggies, THE BEST cheesecake and fresh fruit. Decor was super easy too, all thanks to The Fresh Market.
Easter Brunch Recipe
Decor
Like I mentioned earlier, decor was so easy. I got some adorable Lindt Gold Bunnies and used them as place settings and also made a bright flower arrangement with pink tulips and hybrid lilies. I mean, look at these beauties from the floral section at The Fresh Market.
Appetizer
For the appetizer, I paired a variety of meats from The Fresh Market’s deli section with their Take-and-bake Brie. I added some strawberry jam to the Brie for extra color and sweetness. We cracked open a bottle of King Estate’s Pinot Grigio which paired perfectly with the cheese.
Entree
For the main dish, I made a french cut rack of lamb with a mint pesto and roasted veggies. When James ate the lamb, he said it was the best things he’s ever eaten. There’s just something about a well cooked lamb that is tender, juicy and delicious. The pesto asparagus, sweet potatoes, and brussel sprouts are a great side too. Full recipe below.
Dessert
DessertY’all, I kid you not, this cheesecake is THE BEST cheesecake I’ve ever had. It’s The Fresh Market’s Tiramisu cheesecake that they’re making especially for Easter. It is decorated with the cutest lavender bow and OMG it tastes amazing. We also enjoyed some fresh berries and more chocolate with our dessert.
