Combine lean ground turkey, fajita veggies and fun toppings to create healthy turkey enchiladas. This recipe is surprisingly easy to make and even features a home made enchilada sauce. Whip up the sauce in 10 minutes and smother the turkey and veggie filled wraps. Since there are fajita veggies inside the wraps, the depth of the wraps with sauce, cheese and toppings is on another level. Seriously one of my favorite dishes to make and eat!
Preheat the oven to 400 degrees. Then start cooking lean ground turkey with taco seasoning, salt and pepper. Set aside after the meat is cooked. healthy turkey enchiladas
Saute fajita veggies (onions, peppers, mushrooms, zucchini, etc.) in the turkey fat and more taco seasoning. When the veggies start to darken, (char is good!) set aside.
Prepare the sauce by combining minced garlic, onion, oregano in oil. When the aromatics cook, add in a can of fire roasted tomatoes and chicken broth. Add cumin, paprika, chipotle powder, salt and pepper. Let everything simmer for 5 minutes. Turn off the heat and blend everything with an immersion blender! (or blend in a traditional blender in batches, be careful) healthy turkey enchiladas
Get the wraps ready by layering turkey, veggies and cheese in each wrap. I like to stuff the wraps to the brim for even more flavor.
Pour some enchilada sauce on the bottom of your baking pan, add the wraps on top and gather all of the toppings (cheese, green onions, more sauce)
Drown those wraps in sauce. Leave no tortilla dry or else it will burn. Sprinkle cheese and green onions on top. Cover the enchiladas in tin foil and bake for 15 minutes. Remove the tin foil and broil for 2 minutes (until the cheese is bubbly.)
Prepare more toppings to add on top. My favorites are lettuce, tomatoes, green onions, avocado, (avocado roses to be exact) and sour cream.
