Pasta Primavera in 15 Minutes

Raise your hand if you’re a working #girlboss that is infinitely running around (raises hand). At the end of a busy day, making dinner is the last thing on my mind. On every other weekday, I don’t get home until 8:00PM and at that point all I want to do is lay on the couch and eat a warm homemade meal. The worst part is preparing a decent meal takes over an hour, 9:00 is waaaaay too late for dinner. I was really pleased when I used Barilla Pronto Pasta and Barilla Marinara sauce to create a pasta primavera in 15 minutes. Yes, it really only took 15 minutes, literally dinner on demand…

  

A protip for making dinner much easier: pre-cut your veggies on the weekend. James and I try to go grocery shopping for the week on Sunday and I spend a few hours chop chop chopping the produce that same day. If you look up “storing cut veggies longer” there are some great tips on how to maintain the taste and texture of the vegetables after you cut them. The best part, there is such little prep and cleaning required when cooking during the week. This saves SO much time!

I’m sure you’ve heard of One Pot Meals, which typically take 30 minutes to prepare. Well  I managed to make this Pasta Primavera in less than 15! This Barilla Pronto Pasta is awesome for quick pasta dishes; it’s “One Pan. No Boil. No Drain.” makeing dinner a breeze. Roasted veggies and Parmesan perfectly meld with the noodles creating a fresh and light dish. Primavera means spring, so what better entree to eat in the middle of the season.

A dash of Barilla Marinara sauce helps to round all of the flavors together. This pasta dish is essentially half veggies and half noodles with cream, so the sauce adds that extra burst of bright flavor. Just look at how vibrant the veggies look with the pasta; a full recipe follows after the pictures.

This recipe looks amazing! I'm doing a lot more of a Vegan lifestyle during the week so I can definitely make this Substitute the butter for Vegetable spread, I'll also use whole wheat pasta, and we're in business!

After a long day at work, the last thing I would want to do is spend hours preparing dinner so anything fast is a winner for me! I love this pasta recipe and do it once in awhile, it is so yummy!
