Now that the election is over, it’s time to get into holiday planning mode. Who here is counting down the days until Thanksgiving? (*raises hand*) I have the whole week off so, really excited to get some relax time in. I was brainstorming creative dessert ideas for Thanksgiving that are relatively simple and came up with this pumpkin pie cheesecake. Yes…pumpkin pie and cheesecake in one tasty dessert with streusel on top, what’s not to love. I used a ready-made Marie Callender’s® pie as a base and whipped up a simple cheesecake to bake right on top of the pumpkin pie.
I used Marie Callender’s® Pumpkin Streusel Pie for the base, which I found at my local Kroger. They have tons of seasonal pie options; I think I’m going to try this concept with a dutch apple pie next time! Take your choice of pie out of the packaging and bake at 375 degrees for 30 minutes.
While I waited for the baking, I made some Reddi-Wip hearts. Just make some hearts from the Reddi-Wip on parchment paper and put them in the freezer.
As the pie base is still baking, make the cheesecake topping. Take 1 package (8 oz) of cream cheese, 1 egg, 1/4 cup of sugar, 1 tsp vanilla and add to standing mixer. Beat until combined.
Take the pie base out of the oven after 30 minutes, keep in mind that it is not fully cooked yet. Spoon the cheesecake topping on top of the pie.
Smooth it on and place the pie back in the oven at 375 degrees for 30 more minutes.
The Marie Callender’s Pumpkin Streusel Pie came with a topping to bake on. So after the pie baked for 30 more minutes, I took it out of the oven and added the streusel on top. Bake at 375 for 15 more minutes, until the topping is golden brown.
Cool the pie on the counter for an hour and then place in the refridgerator for 4 hours, I chilled mine over night. Once it’s chilled, it is ready to serve!
When you serve the pie slices, take the Reddi-wip frozen hearts out of the freezer and top the pie with them! Since the Reddi-wip is made with real cream, it tastes extra decadent.
