My parent’s vegetable garden has been booming this season, so I’ve been enjoying tons of freshly grown vegetables and herbs. Since veggies are plentiful, I have tried testing out tons of recipes that feature the garden treasures. James and I try to eat fairly healthy throughout the week, so the organic fares are much appreciated. #thanksmom
This Thai Green Curry with Tofu features garden fresh bell peppers, tomatoes, chili peppers, basil and lemongrass. A full recipe follows the pictures. I honestly feel that the garden veggies taste substantially better than grocery store purchases, but maybe it’s because I’ve witnessed the hard work my parents and grandparents put into their garden. I’m excited to see what else grows in my parents garden. I’m actually on watering duty this weekend since they’re out of town, so wish me luck!
